Chef's Profile

Executive Chef Hitoshi Taguchi

From February of 2013, Hitoshi Taguchi has served as Executive Chef of the newly opened Teppanyaki "Takumi" at the InterContinental Tokyo Bay.
The appeal of preparing teppanyaki in front of the customer is in being able to enjoy it with your eyes, ears, and nose, and Chef Taguchi always stands in his kitchen with thoughts of treating his customers as family. He works to provide a comfortable time and space with a sense of distance from his customers that is neither too close nor too far away.
He selects his own ingredients, and for vegetables in particular, he prepares unusual ingredients that are not eaten in the home. He demonstrates his skill at the teppan griddle with the goal of creating the flavors and sensations that can only come from teppanyaki.
